Kozak Buvette at Genusswoche 2025 – A Taste of the Season at Markthalle Basel

From 18 to 28 September, Kozak Buvette participated in Genusswoche at Markthalle Basel, presenting a special seasonal starter made with fresh Swiss tomatoes — a celebration of simplicity, freshness, and craftsmanship.
🍅 Fresh Tomato Starter with Cheese & Homemade Mayonnaise
(Frische Tomaten-Vorspeise mit Käse und hausgemachter Mayonnaise)
Our signature dish featured juicy Swiss tomatoes, sliced about 8 mm–1 cm thick, and topped with a mixture of finely grated cheese, chopped hard-boiled eggs, and homemade mayonnaise blended with garlic. Each serving was seasoned with salt and pepper, then garnished with a small olive and fresh parsley — a light, refreshing starter that perfectly captures the essence of late summer. The recipe comes from our chef Tetiana, whose inspiration brings a touch of Ukrainian home cooking to every plate.
We were thrilled to be part of Genusswoche 2025, alongside Label Fait Maison, in support of authentic homemade cuisine and high-quality local products.
