Ukrainian restaurant Kozak buvette is part of the Slow Food chefs’ alliance

Just a few steps from Basel’s main station, inside the Markthalle, Kozak Buvette by Grégoire Fabre offers Ukrainian specialties made from organic and locally sourced ingredients. The word “Kozak” has several meanings, but etymologically, it refers to “a free individual.” Grégoire Fabre seeks that very freedom through Swiss organic producers. For him, Kozak Buvette is a fight for a world that respects both nature and people.
At the stove are Lyubov and Tania, cooking up delicious dishes just like Babuschka used to: borscht, banosh, varenyky, rassolnyk... a true culinary journey! They also prepare a variety of organic vegetable preserves, traditionally fermented the Ukrainian way.
